Separate the pieces out and place 1-3 pieces in envelopes (depending on how many pieces you have, you want to end up with about 7 envelopes). Mail each envelope separated by a day or two, so she can end up getting all the pieces in 1-2 weeks and complete the puzzle.
Take a sign language course together, learn some non-verbal communication.
Create coupons with an activity on each one - i.e. back massage, dinner out, movies for two, etc.
Leave a rose on her pillow before she gets home at night.

The day of your date send a message to the person that says you can't make it. About an hour after your date was suppose to begin place a message in a bottle, a single red rose and a map that has a place to meet on the doorstep ring the doorbell and run to your car and go to the place you want to meet. Their have a dinner and radio ready. eat and then dance the night away.
Take a painting or photography course with each other.

Make homemade pizza at home and rent movies or play trivia pursuit to stimulate conversation.
Have your date make a list of 20 questions about herself that you wouldn't know. You do the same. Exchange papers and answer as many as you can, then proceed to ask them the remaining questions taking turns. It is 20 questions backwards.

The last rose should lead her to you, at your favorite mall restaurant, where you will treat her.
Make her the "model of the evening", go somewhere and just take pictures of her all evening.
When you sense she is irritated or tired, shut up and listen. Don't try to touch her. If questioned, answer with empathy.
Go vintage store shopping and find the perfect "swing" outfit. Then head over for swing lessons and a night on the town!

When my girlfriend was on vacation she gave me the key to her house so i can let her dogs out and what-not and the morning of the day she was coming home I spread 3 bouquets of flowers all over her bed, and one fake one, than left a note that said "The day every last petal falls of these flowers will be the day I stop loving you."

For your girlfriend/boyfriends birthday, anniversary etc, If you live near a lake or some place that has evening dinner cruises on paddle boats, make reservations and take your special someone to a beautiful dinner on the lake as you watch the sun setting.
